Probiotic refers to bacteria that are “pro-life” or enhance life. These health giving bacteria and their lactic acid medium are the life source and preserving force of raw organic cultured vegetables and many fermented drinks.

Together lacto-bacilli, lactic acid, enzymes, and other compounds:

Powerkraut: A Raw, Whole Food, Probiotic

I was offering a Sauerkraut and Kim chi demo at a natural food store, and a gentleman approached me, asking me if I was the producer. “Oh good. I wanted to let you know…your sauerkraut has totally changed my life. I have suffered from Colitis for years, trying different medicines, with little or no relief. I started eating your kraut everyday, and it also inspired me to change my diet. I’m well now.” Honestly I just stood a bit speechless, with tears almost welling up. I hadn’t expected to hear such a story. Colitis is an inflammation of the colon’s membrane lining, resulting in ulcers and often strong abdominal pain. (I do not know if this gentleman consulted a doctor or not, which I would recommend. More doctors are focusing on food in their nutritional and preventive care programs, and they can advise you as to what might be helpful if you have a chronic condition.)

Slow Food for the 21st Century

Our Cultured Vegetables and Fermented Drinks are representatives of Slow Food, a movement that began in Italy with Carlo Petrini in 1986. Carlo wanted to preserve old traditions of cooking and community life that he felt would become lost when Italy began embracing the Fast Food Industry. Today the organization is active in a least 50 countries and has a worldwide membership nearing 100,000.

Slow Food is handcrafted, labor-intensive food that has life in it, and feeds our souls as well as our bodies. We recognize how the taste and feeling of home made meals, baked sourdough bread, well-crafted cheeses and wines are different from those that are factory processed. These handcrafted foods have been a traditional part of daily meals in many countries for thousands of years, inspiring health and happiness for the young and old.  Slow food reflects generations of commitment to the land and devotion to processes that involve time and care. The Slow Food movement encourages friends and families to share meals, evoking feelings of meaning and gratitude. When we prepare and eat Slow Food, we make a choice to slow down and connect.
